Both games ship content that a normal run never shows. This guide lists what is in the Slay the Spire 1 files and the Slay the Spire 2 v0.107.1 files.
StS1 cards that are never offered
Three finished cards are left out of the card library, so no reward, shop or card generator can offer them:

Calm and Wrath are also left out of the card library, but they are in use: they are the two choices Stance Potion shows when you drink it.
StS1 Watcher cards cut after their art was drawn
Five Watcher cards have finished card art and English card text in the game files but are not in the game: Causality, Cleanse Evil, Flow State, Metaphysics and Step and Strike.
Two live Watcher cards keep older internal names from the same period. Rushdown is stored as "Adaptation" and Pressure Points as "Path To Victory".
The Apology Slime
The Apology Slime is an Exordium monster with a translated name in the game's languages, but it has no moves and no HP values and never appears in a fight.
An achievement you cannot earn
StS1's achievement text includes "Energy is Overrated": play 10 or more 0-cost cards in a single turn. The achievements screen does not show it, and nothing in the game unlocks it.
StS2: the Deprived and the Random character
Slay the Spire 2 contains Deprived, a character that cannot be played. It has 1000 HP, 99 gold, 100 energy, an empty starting deck and no relics. Its name is translated into 13 languages.
The "Random" button on the character select is also a character entry that cannot be played. The game starts the run as one of the playable characters. Its unused kit is 1 HP, 1 gold, the Circlet, and one Strike and one Defend from each character. See starting decks for every character.
